Ingredients
Batter
- 250 g self-raising flour
- 250–300 ml (plant-based) milk
- 2 eggs
- 1 scoop 1SCP/D
Toppings (optional)
- Banana + honey
- Berries
- Walnuts
Instructions
- Stir the self-raising flour and the protein powder together in a large bowl.
- Make a well in the centre, add the eggs and 250 ml of milk, and whisk until you have a thick batter. A few small lumps are fine; overmixing makes the pancakes tough.
- Let the batter rest for 5 minutes.
- Check the texture: the batter should be thick but pourable. Too stiff? Stir in a splash of extra milk.
- Warm a non-stick pan over medium heat and grease it lightly with a little butter or oil.
- Pour about 3–4 tablespoons of batter per pancake into the pan. Cook for about 2 minutes, until bubbles appear on the surface and the edges look set.
- Flip and cook for another 1–2 minutes, until golden brown and cooked through.
- Serve with the toppings of your choice.
